Festive Ice Cream Sundae

This is the quickest, easiest dinner party dessert you’ll ever make, and it tastes absolutely divine!

This Festive Ice Cream Sundae tastes decadent and looks impressive, but you don’t have to spend a fortune on it. By all means, if you want to splash out on expensive ingredients, then go for it, but I certainly haven’t. I’ve used own brand mincemeat, ginger nuts in plain packaging and the cheapest vanilla ice cream in the supermarket freezer section. For the alcohol, I used a miniature Cognac which cost a couple of pound to buy. But it tastes so luxurious, you’d never know.

One place I did splash out however, was the caramelised nuts. I love them and would eat them all year round, but you can only seem to get them at Christmas in the UK. As it’s a once a year indulgence, I don’t mind spending £3-£4 on a pack. I only put a small handful in the sundae and they were delicious. The nuts added a different texture and flavour – a nice crunch and sweetness to go along with the the crumbly warmth of the gingernuts, the smooth, cold vanilla ice cream and the hot tang of the mincemeat and alcohol. It really finished it off nicely.

Just to be clear to my friends across the pond, as I know mince pies aren’t very popular over there; mincemeat in this context is a sweet mix of fruit, spices and suet. There is no meat (or meat substitutes) in this recipe. It’s a sweet treat through and through.

Ready in 5mins (yes, really, 5mins!) – serves 1.

Ingredients:

  • 2 tablespoons of mincemeat (mince pie filling)
  • 1 tablespoon of Cognac or any type of brandy you like
  • 2 large scoops of vanilla ice cream
  • 1 or 2 crushed gingernut biscuits
  • A sprinkle of dried cranberries and caramelised nuts (optional)

Method:

  • Put the mincemeat and brandy in a jug or heatproof dish.
  • Mix together, then microwave for 30secs.
  • Meanwhile, put 2 large scoops of ice cream in a dish or sundae glass and crush the gingernut biscuits over the top.
  • Pour the hot brandy and mincemeat over the ice cream and biscuits and top with the cranberries and nuts if using.
  • Serve immediately.
