Cheese, Tomato and Chive Omelette

I love an omelette. Packed with protein and veg, it’s such a good start to the day; especially if you wash it down with a glass of orange juice to make sure you absorb as much iron as you can. (See my post How To Be A Healthy Pesky/Veggie/Vegan for more info on this if you’re interested.)

This is a simple, super easy recipe for anyone who’s sick of cereal in the mornings. You could even make the mix the night before and just cook it in the morning if you’re pushed for time. During busy periods in work, I even make omelettes in advance, store them in an airtight container in the fridge and heat them through in the microwave for a couple of mins in the mornings. They keep for a few days and means I’m having healthy breakfasts, even when I’m starting work before dawn.

Ready in 15mins (5 mins prep, 10mins cook) – Serves 1.

Ingredients:

  • 1 tablespoon of olive oil
  • 2 free-range eggs
  • 50g of cheddar cheese, cut into small chunks
  • 6-8 plum or cherry tomatoes, washed and cut into quarters
  • A pinch of basil
  • A pinch of oregano
  • A pinch of black pepper
  • A pinch of salt
  • 1 heaped teaspoon of chopped fresh chives

Method:

  • Put a frying pan or omelette pan on the hob over a medium/hight heat and add the oil.
  • Whilst the pan is heating up, place all other ingredients into a bowl or jug and mix well.
  • Pour the mixture into the hot pan and spread out evenly.
  • Fry for about 5mins, or until you can easily get a spatula underneath the omelette without it falling apart, and it’s starting to colour on the underside.
  • Flip and fry on the other side for a further 5mins, until firm and golden brown on both sides, then serve.
