Honey Mustard Salad Dressing

Salads are massively underrated. During the summer I eat salads pretty much every day with different cheeses, fish or roasted vegetables and of course, dressings. I love a shop-bought salad dressing, it’s so easy to put a bottle in your lunch bag to take to work, but if I’m at home, I like to make my own. This salad dressing is so quick and easy and goes so well with tuna or prawns, as well as my personal favourite – butternut squash and goats cheese. I like to roast my squash in olive oil and garlic and add it to my salad hot. I love having hot and cold in the same dish and the squash melts the cheese slightly making a lovely gooey texture to go along side the crunchy salad. I sometime add walnuts too, to give a bit of an extra crunch.

Add your dressing to the salad just before you eat it, as the lemon juice can wilt your delicate salad leaves if they are left to sit in it for longer than an hour or so.

Ready in 2mins – Serves 1.

Ingredients:

  • 1 teaspoon of good quality olive oil
  • 1 teaspoon of lemon juice
  • 1 teaspoon of honey (I used Acacia)
  • 1 teaspoon of mayonnaise
  • Half a teaspoon of Dijon mustard
  • A pinch of black pepper

Mehtod:

  • Put all your salad items in a bowl (I’ve gone for hot roasted butternut squash, goats cheese, walnuts, lettuce, spinach, cucumber and red onion)
  • Mix all the dressing ingredients together and pour on top of your salad.
