Pink Mojito

My social media feeds have been swamped with Barbie themed recipes recently, and I didn’t know whether to join in with them or not. So I put it to a vote on the Pesky Recipes Instagram page and 60% of the people who voted, wanted a Barbie themed recipe next, so here we are. I give the people what they want!

I haven’t seen the film myself yet, but everything I’ve heard suggests that it’s not really aimed at children. So I thought my recipe wouldn’t be either.

I’ve had this recipe for a little while, and was going to post it on Valentine’s Day. But as it’s a beautiful shade of pink, I thought it would also be the perfect drink to sip whilst watching the new Barbie Movie.

My friend Leah used to be a Cocktail Slinger, and knows SO many cocktail recipes off by heart. I message her sometimes, asking how to make particular cocktails, or occasionally, I just send her pictures of my drinks cupboard, or of bottles I’ve bought on a whim, then realise I don’t know what to do with once I get home. She always comes back with delicious suggestions. Recently, I bought a bottle of cherry vodka and a bottle of pink lemonade, as they were on a good offer at the supermarket. I sent her a message asking for inspiration, and this was what she came back with – a pink twist on a Mojito. It’s absolutely delicious, and really easy to make.

I use a regular shot glass to measure.

Makes 1 drink.

Ingredients:

  • A good sprig of fresh mint
  • One part lime juice
  • 5 or 6 ice cubes
  • 1 part cherry vodka
  • Pink lemonade

Method:

  • Put the mint and lime juice in a tall glass.
  • Muddle it to break up the mint.
  • Add the ice and vodka
  • Add the pink lemonade to the top.
  • Decorate with whatever you like – a small mint sprig, a lime wedge, a couple of cocktail cherries on a cocktail stick or a tacky umbrella, and a straw.
