Patatas Bravas

Patatas Bravas is a Spanish tapas dish consisting of fried potatoes in a spicy tomato based sauce. Quite often in restaurants the sauce is served on top of the potatoes. This looks pretty, but you end up left with dry potatoes at the bottom of the bowl as everyone takes the ones with the delicious sauce on first. So in my recipe, I cook the dressing with the potatoes. This not only means that every mouthful will have a taste of every flavour, it also means you only need to wash one pan afterwards. Win win!

This recipe can be made a few days in advance and reheated in the microwave or in a pan. It’s lovely served with other tapas dishes for a dinner party or date night, but it’s also great as a light lunch with crusty bread and salad.

Ready in 20 mins – serves 2

Ingredients

  • 4 tablespoons of olive oil
  • 150-200g potato, cut into tiny cubes
  • 1 small red onion, finely diced
  • 2 fresh tomatoes, diced
  • 1 clove of garlic, crushed and finely chopped
  • 1 teaspoon of paprika
  • Half a teaspoon of cayenne pepper
  • Half a teaspoon of chilli flakes
  • A pinch of salt
  • 1 tablespoon of lemon juice
  • 1 tablespoon of tomato puree
  • 1 teaspoon of tomato ketchup
  • 1 teaspoon of basil
  • 1 teaspoon of oregano

Method

  • Put the olive oil and potatoes in a large frying pan and heat to a medium/high heat.
  • Fry, turning the potatoes over often for 5 mins or until they are a lovely golden brown colour on most sides. – Pic 1
  • Add the onion, tomatoes and garlic and fry for a few mins until softened. – Pic 2
  • Add the paprika, cayenne pepper, chilli flakes and salt and fry for a few mins to infuse the spices.
  • Turn the heat down slightly and add the lemon juice, puree and ketchup. – Pic 3
  • Fry for 5 mins then add the herbs.
  • Fry for a minute. Once everything is combined and smelling amazing, it’s ready to serve.
