I first had broccoli in coleslaw at a friend’s wedding a few years ago, and I’ll be honest, I was dubious. Growing up in the North West of England in the 90’s, broccoli was something that was boiled until it was mushy and then smothered in gravy. However, the catering staff had gone out of their way to make me a veggie version (the rest had bacon mixed in) so the least I could do was try it. Well it was delicious. Even my husband, a self-confessed veg-dodger enjoyed it. You can eat broccoli raw, but that still seems a strange concept to me, so I blanch it just to satisfy that niggling voice in my head that still screams “this is wrong, it should be a soggy mess”.
When you buy a tub of coleslaw from the supermarket it’s usually made up of carrot, onion, cabbage and mayonnaise. I have used kale instead of cabbage as they’re similar vegetables and kale is full of iron which is good for us veggies and peskies. There is no added salt or sugar which you sometimes find in shop-bought coleslaw. It’s colourful, tasty, healthy, and if you’re calorie conscious, use low fat mayonnaise.
I served this at a New Year’s Eve party as part of the buffet but didn’t tell anyone what was in it until after they had tried it. I wanted to get people’s honest opinions and didn’t want them to be put off by the unusual ingredients. Everyone loved it and went back for seconds even after they discovered the broccoli and kale.
Ready in 10 mins. This makes a large bowl, enough for about 6 people.
- 150g of broccoli, cut into small pieces – each floret into halves or quarters. – Pic 1
- 1 large carrot, grated (no need to peel, just wash)
- 1 red onion, cut in half and then thinly sliced. – Pic 2
- 25g of raw kale – tear up any big leaves and remove all stalks.
- 200ml of mayonnaise
- 1 tablespoon of lemon juice
- 1 teaspoon of black pepper
- Blanch the broccoli – put a pan on the hob on a high heat with the lid on. When the water is boiling add the broccoli. Put the lid back on and boil for a minute then turn the hob off but leave the pan on the ring for another minute. Remove, drain well and allow to cool.
- Add all ingredients into a large bowl and mix well. – It’s as simple as that!
