
Potato Salad is a must at any BBQ, picnic or garden party. It’s so quick and easy to make and is absolutely delicious with quiche, salad, meats and vegetables.
You can, of course, use regular potatoes. But I think the tinned new potatoes taste really nice, and as there’s no washing, peeling or chopping, they save you time too.
You can buy really good vegan mayo at all supermarkets now, so this vegan version is no more effort to make than a regular Potato Salad, and it tastes so good, that even carnivores wont be able to tell the difference.
It can be made in advance and kept in an airtight container in the fridge for a couple of days. Then just transfer to a nice bowl, top with fresh chives and serve.

Ready in 10mins.
Ingredients:
- A 300g tin of new potatoes
- 1 large garlic clove
- 1 teaspoon of lemon juice
- 4 tablespoons of vegan mayo
- 1 tablespoon of fresh chives (+ extra for decoration if you like)
- A good pinch of salt and pepper
Method:
- Pour the new potatoes into a pan, top up with water so the potatoes are just covered and bring to the boil on the hob.
- Turn the temperature down and simmer for 5mins, then drain.

- If the potatoes are large, cut them in half so they are bite sized, then transfer them to a bowl and add the rest of the ingredients.

- Mix well, top with the extra chives and serve.
